I happened to ask my son what are some meals he would like for dinner. He had a few suggestions that he really wanted, the first being Satay Chicken. Having not made it before, I felt the pressure on as he is a "real critic" - haha!
So I began to think of some of the ingredients and flavours that I would need and hence came up with this recipe...
Ingredients:
To Cook Rice:
2 Cups Basmati Rice
4 Cups water
1 tblsp Olive Oil
1 tblsp SAVEUR Kerala Fried Rice Spice
Optional to add into the rice - Mixed Fresh or Frozen vegetables (I used frozen)
To Cook chicken:
500g Chicken Breast - cut into strips
1 Tblsp SAVEUR THAI MIX
1 tblsp Olive Oil (or other oil of choice)
To Make Satay Sauce:
1 Cup Crunchy Peanut Butter
1 Can Coconut Cream
1 tblsp Sweet Chili Sauce
2 tblsp lemon juice
2 tblsp SAVEUR Satay Spice
2 tsp SAVEUR Chili Spice
Method:
Cook Rice:
Place a pot on stove. Add olive oil and rice.
Heat, stirring until white tips form on the rice.
Add water and SAVEUR Kerala Fried Rice Spice.
Bring to a boil, cover and simmer until cooked.
*If adding frozen vegetables, add when there is still some liquid in the pot, cover and continue to cook over low heat for few minutes.
Remove from stove, and fluff with fork.
Cook Chicken:
Mix chicken strips, oil, and SAVEUR THAI MIX.
Add to heated pan, and cook, turning regularly, until golden.
Set aside.
Cook Satay Sauce.
In a pot add Peanut butter and Coconut cream, stir well over low heat until combined. Add all of the rest of the ingredients, continuing to simmer for a few more minutes.
Place all the chicken into the Satay Sauce and stir through.
Serve Chicken over the rice.
Enjoy!
Verdict:
My biggest critic, my one and only child absolutely loved it! Bonus - Hubby was super impressed too! I will definitely be making this again.

Colour My World
One of the things that mostly fascinated me when young and growing up with a Mediterranean influence was all the beautiful colours and incredible aromas in a lot of the spices and herbs that we regularly used in our traditional cooking.
Cloves, Nutmeg, Cinnamon, Oregano, Basil, Parsley, Rosemary, Bay Leaves, Dill, being the ones that I remember most and still have so many memory reminders of food being prepared with mothers, aunts, grandmothers, whilst the men usually visited the local "kafenio" café, for their own daily gathering and catch-up.
It's incredible, what the senses can do! The sense of smell, taste... My mind often wonders to older days where memories were made, most around the preparation, creation, and eating of Delicious Food, created with soul and love.
So how does this tie in with SAVEUR? You may ask?
The beautiful Colours and Amazing aromas of All-Natural SAVEUR certainly do arouse a lot of senses and totally tantalise one's tastebuds! Even though they are all favourites, there are a few that have an extra soft spot for me, as they contain a lot of my much loved traditional herbs and spices.

What's for Dinner?
One of the most commonly used questions in our household... What's for Dinner! Oh if I got a dollar for each time those words were uttered, I could go on a very nice holiday!
So, What IS for Dinner?
Here at home, we TRY to eat healthy, and I aim to fit in my family's dinner with my LOW CARB healthy eating, so that we all eat the same thing and I'm not spending unnecessary hours Cooking in the Kitchen.
Our Meals usually consist of a lot of SALADS - Garden Salad, Greek Salad, Coleslaw - all nice and low in carbs. Also our protein - whether Chicken, Pork, Beef, Fish, Sausages, Lamb, Eggs, etc.
Chicken and Salad, Pork and Salad, Beef and Salad - you get my drift: In actual fact this can get very boring... UNTIL NOW!!
Each Meal is Tantalisingly Exciting, with Amazing, Aromatic taste variations. I simply go to my pantry and just select a new (any) SAVEUR product to use - it's that SIMPLE! I just decide whether I feel like Italian, Thai, Indian, Mexican, etc, and I instantly have wordly flavours added to my daily, healthy meals.
No matter what I serve up, it's sure to be a crowd-pleaser!

WHAT TO COOK?
If you are anything like me, you think about meal times coming up, family gatherings, festive gatherings, etc. and you panic so far in advance about what to cook and serve, that you end up not enjoying the process of creating something fabulous!
Not only that, but also not enjoying the meal time gathering as you place too much pressure on yourself, trying to ensure everyone is happy and fully satisfied!
Does this sound like you at all?
Thankfully there is help with alleviating a lot of pressure from disaster cooks like myself!
What is it you ask?
