Esther's Thai Satay Chicken

I happened to ask my son what are some meals he would like for dinner. He had a few suggestions that he really wanted, the first being Satay Chicken. Having not made it before, I felt the pressure on as he is a "real critic" - haha!
So I began to think of some of the ingredients and flavours that I would need and hence came up with this recipe...

 


Ingredients:

To Cook Rice:
2 Cups Basmati Rice
4 Cups water
1 tblsp Olive Oil
1 tblsp SAVEUR Kerala Fried Rice Spice

Optional to add into the rice - Mixed Fresh or Frozen vegetables (I used frozen)


To Cook chicken:
500g Chicken Breast - cut into strips
1 Tblsp SAVEUR THAI MIX
1 tblsp Olive Oil (or other oil of choice)

To Make Satay Sauce:
1 Cup Crunchy Peanut Butter
1 Can Coconut Cream
1 tblsp Sweet Chili Sauce
2 tblsp lemon juice
2 tblsp SAVEUR Satay Spice
2 tsp SAVEUR Chili Spice

  




Method:

Cook Rice:
Place a pot on stove. Add olive oil and rice.
Heat, stirring until white tips form on the rice.
Add water and SAVEUR Kerala Fried Rice Spice.
Bring to a boil, cover and simmer until cooked.
*If adding frozen vegetables, add when there is still some liquid in the pot, cover and continue to cook over low heat for few minutes.
Remove from stove, and fluff with fork.

Cook Chicken:
Mix chicken strips, oil, and SAVEUR THAI MIX.
Add to heated pan, and cook, turning regularly, until golden.
Set aside.

Cook Satay Sauce.
In a pot add Peanut butter and Coconut cream, stir well over low heat until combined. Add all of the rest of the ingredients, continuing to simmer for a few more minutes.
Place all the chicken into the Satay Sauce and stir through.

Serve Chicken over the rice.
Enjoy!

Verdict: 
My biggest critic, my one and only child absolutely loved it! Bonus - Hubby was super impressed too! I will definitely be making this again.

SAVEUR-y Low Carb Zucchini Loaf

After making Low-Carb Apple muffins, I really wanted to make a Savoury alternative, so into my kitchen I went, with pen and paper, and started to bring out some of my favourite ingredients: zucchini, feta, almond meal... and then started to one by one put things together.
I opted for a Vegetarian version this time, optionally it would be nice to add diced bacon.

 

I was unsure about how it would all turn out, especially since I decided to make a loaf instead of the usual smaller size muffins that I have been making lately. I'm so glad I did! It turned out Amazing - so much better than I had thought!

Ingredients:

2 cups diced Zucchini
2 cups Feta cheese, crumbled
1 cup shredded Mozzarella cheese
6 eggs, lightly whisked
1/2 cup water
1/2 cup butter, melted


2 cups Almond meal
2 tsp baking powder
1 tsp SAVEUR SEASONED SALT
1 Tblsp SAVEUR JAPANESE CURRY MIX




Method:

Mix Almond Meal, Baking Powder, SAVEUR Seasoned Salt, and SAVEUR Japanese Curry Mix in a Bowl. 

In the other bowl with the whisked eggs, add melted butter, water, zucchini, feta, mozzarella.

Add the Egg mixture to the dry ingredients, mix well.




Place mixture into greased loaf pan

Bake in pre-heated moderate oven approximately 50 minutes until cooked and golden brown.

Remove from oven when cooked.
Leave in pan approx. 10 minutes, then remove from the pan to place on a rack to cool.




Once cooled, Slice and Enjoy!

Satay Dipping Sauce

This Very Easy, and Super Tasty Satay Dipping Sauce is perfect for all Satay lovers!
Why go out for Satay, when you can have it at home? 



Ingredients:

1 small can coconut cream
1/2 tblsp SAVEUR SATAY SPICE
1/4 cup crunchy peanut butter

Simmer all ingredients on low heat until warm.

Serve with Roti bread.

*Add cooked chicken or vegetables into the sauce for a complete meal.

Quick and Easy Low Carb Apple Muffins

This is definitely my most favourite recipe at the moment! It's quick, it's easy, its super delicious and I really enjoy making and eating them too! 
It's the perfect recipe for me to use the gorgeous apples growing on our tree.


I actually like this recipe so much that in the coming days, I will try some sweet and savoury variations and see what I come up with and what they taste like - without the guilt of sugars and carbs! How awesome is that!

Low Carb Apple Muffins

Ingredients:

2 cups Almond Meal
2 tsp baking powder
1 tsp SAVEUR CINNAMON Blend Spice

4 eggs - lightly hand beaten
1/2 cup Butter - melted
1 cup Apples - peeled, cored and diced
1/4 cup water
1/4 cup Stevia 


Method:

In one bowl mix together the Dry Ingredients (almond meal, baking powder and Saveur Cinnamon Blend spice)

In another bowl mix together eggs, melted butter, apples, water, and Stevia

Add dry ingredients to wet ingredients, stirring until fully combined


Pour mixture into a 12 hole greased muffin pan

Bake in moderate oven for approximately 40 minutes, until cooked inside.

Two Ingredient Bread, plus a SAVEUR twist

WOW! Can you believe it? Bread using only 2 ingredients, and no rising time! This is the easiest bread you could possibly make!
When someone alerted me to this recipe, I was extremely doubtful.
Being a traditional bread maker - making bread every week at home using a recipe that has been handed down by my grandmother and mother, I must admit, I was sceptical, and could not believe that firstly - bread can be made so easily, and secondly - that it would taste good... So what better way to find out, than to make it myself! 


Ingredients:

2 cups Self Raising Flour
2 cups Natural Greek Yogurt


Method:

Mix ingredients together in a bowl.
Divide mixture into approximately 10 round/roll shapes
*Add a little extra flour if too sticky.
Brush a little milk on top of each bread roll
Place on greased oven pan.
Bake at 190 degrees celcius until brown



To jazz up the bread rolls, I added 2 tablespoons of SAVEUR CALABRESE PESTO MIX in with the flour and yogurt. Any of the SAVEUR MIXES can be added for that unique flavour.

Esther's Delicious Pasta Tip

My Quick, Easy and Delicious pasta tip:



Every single time that I boil pasta, what I like to do is once I drain it after being cooked, I place it back into the pot, drizzle some Olive Oil over it plus sprinkle some SAVEUR GARLIC MIX, and stir.

It won’t go gluggy, it won’t stick, and it gives it a beautiful texture and taste even on its own, and ready to use/be added to whatever pasta dish I’m making.


My son even likes to eat it like this on its own with Parmesan cheese sprinkled over it.

Espresso Coffee and SAVEUR Cinnamon Muffins

Did someone say Coffee?
I don't know about you, but as soon as I see a recipe with coffee in it, I stop to take a closer look. This recipe is perfect for coffee lovers, and so quick and easy to make. You will love them and so will your family.
Make sure you use a good quality aromatic espresso coffee so that you can indulge in the aroma and taste. The SAVEUR Cinnamon Blend Baking Spice adds to the aroma and tops it off perfectly.

Ingredients: (Makes 12)
1 cup strong espresso coffee (allow to cool/cold)
2 cups Plain Flour
1 tablespoon Baking Powder
1 egg
1/2 cup thickened cream
3/4 cup brown sugar
2 teaspoons SAVEUR Cinnamon Blend Baking Spice
fine icing sugar (optional)



Method:

1). Pre-heat oven to 180 degrees celcius

2). Brush a 12 hole muffin dish with butter

3). In a mixing bowl, add the flour and baking powder - mix


4). Add the Brown Sugar and SAVEUR Cinnamon Spice

5). In a separate bowl beat egg and thickened cream

6). Add the coffee plus the egg mixture into the flour. Beat well.


7). Pour into the muffin pan, dividing evenly among the 12 holes


8). Bake in pre-heated oven for approximately 20-30 minutes.

9). Allow muffins to cool and dust with optional icing sugar



My Dear Hubby loved the sound of these! He said later that night: "What's for dessert?"
So I prepared something super special for him which he loved -
In a bowl I placed 2 of the coffee muffins, some whipped cream, cut a chocolate wafer in half and also sprinkled extra half a wafer over the muffins... He TOTALLY loved it!... HOORAY to putting a smile on his face and happy taste buds and tummy!

Low Carb Eating made Easy

Who says eating Low Carb is difficult, boring, tasteless? I like to think of it as a lifestyle rather than a diet. Know which foods are good to eat in abundance and limit those which are not suitable on a low carb eating regime. After about two weeks, it will become second nature and you will start to feel wonderful without the cravings, and the highs and lows that can be caused with carbs and sugar - it's a great feeling!

One of the easiest, tastiest and versatile recipes I like to make often are Quiches - Even better Quiche with No Pastry! Below is my recipe for Egg and Bacon Quiches which can also have many variations - and at only 2g carbs each for these beauties, it's a Winner!


Ingredients: (Makes 12 mini quiches)             
8 eggs
2 cups (500ml) thickened cream
12 rashers bacon (streaky)
300g crumbled Feta cheese
12-15 cherry tomatoes cut in half or thirds
1-2 teaspoons SAVEUR Seasoned Salt
2 tablespoons SAVEUR Pomodoro Basil Mix


Method:

1. Grease a 125ml 12 hole muffin pan (or 2 6 hole pans). Line with baking paper
Pre-heat your oven to 180 degrees celcius


2. Arrange a bacon strip around the side of each hole, and divide crumble fetta among each


3. In a bowl with a pouring lip (or large jug) mix the eggs and cream with a whisk until combined well. Season with the SAVEUR Seasoned Salt and SAVEUR Pomodoro Basil Mix


4. Pour Mixture evenly over the Feta and top with the tomatoes dividing among the 12 quiches.


5. Bake in oven for approximately 30 minutes or until firm to touch. Leave in pan for 5-10 mins to cool after removing from oven, and then place on wire rack to cool nicely.





















These were a huge hit! Great to eat on their own, serve with a salad, or use as a side dish for any cooked protein meal. You can leave them in the fridge for up to 2 days (if they last that long) and have for breakfast or lunch. You can also freeze these for up to 3 months. I will definitely be making these regularly... Let's see what variations we could come up with:

* You could substitute the Feta with basically any other cheese: Parmesan, Cheddar, Haloumi, etc.
* In the quiche you could add: onion, capsicum, olives, ham, salami, shredded cooked chicken, sliced kabana or chorizo. All of these are low carb

* SAVEUR product alternatives that would also taste Fabulous:
- Himalayan Salt and pepper
- Calabrese Pesto Mix
- California Onion Mix
- Curry House Mix
- Spiced Beet Hummus Mix
- Creamy Dill Mix

Low Carb Tomato Tacos

A few days ago I shared our Preservative-free Tacos for all the family experience. Click here to View that Blog.


On that day I also made Low Carb Tomato Tacos for myself to fit in with my healthy eating lifestyle.
All I can say is that they looked amazing, were very Moorish, and Ultra delicious, plus I felt great eating them. They were so good and so quick and easy to make, that I will definitely be making them again on a regular basis, and with different taste variations.




Recipe Serves 4 -
(You can Double the quantity of the Mince and Taco Spice if you would like to also make regular Tacos for the family.)                


Ingredients:
300g Beef Mince (I used half beef, half pork)
1 small finely chopped onion
Can crushed/diced tomatoes or 1 cup passata
1 tablespoon Olive Oil
1 teaspoon All Natural SAVEUR TACO SPICE
pinch salt (optional)
Can red kidney beans (optional)

4 medium to large tomatoes

Lettuce leaves shredded (approx. half cup)
Grated Tasty Cheese (approx. 1 cup)
4 heaped tablespoons Sour Cream (I made a Quick and Easy SAVEUR Guacamole Dip - see instructions and picture below)                                                










Method:
Add onion to pan, lightly sautee, add mince, continually stirring until browned and cooked.
Add salt, SAVEUR Taco Spice, and tomatoes
Reduce heat, simmer 10 mins - add beans and heat through.




Place tomatoes upside down on a chopping board. Cut into wedges not cutting all the way through to the bottom. (see picture)
Slightly pull apart tomato and add Cooked Beef mince mixture into each tomato.


Add lettuce on top of mince
Sprinkle Grated cheese on top of each


Top with a tablespoon of Sour Cream, or *SAVEUR Guacamole Dip.

                                  *Add one Tablespoon SAVEUR Guacamole mix to 1 cup Sour Cream
You will have fun making these, and they are so beautiful to look at. Most of all, you will enjoy eating them and they are a Wonderful Entertaining idea too!

Preservative-free Tacos for all the family

Deciding what to cook does present it's challenges for sure! Especially when you are trying to eat Healthy and watch those carbs!
Today I have opted to cook Tacos for the family with several options we can all choose from:
* Hard Taco Shells
* Tortilla wraps
Naturally Saveur FB Group
* Low carb Tortilla wraps
* Tomatoes (recipe coming on next blog post)


MY RECIPE & OPTIONS
Serves 4-6


Ingredients:
500g Beef Mince (I used half beef, half pork)
1 medium finely chopped onion
Can crushed/diced tomatoes or 1 cup passata
1 tablespoon Olive Oil
1-2 teaspoons SAVEUR TACO SPICE
pinch salt (optional)
Can red kidney beans (optional)

TACO Shells and/or Tortilla Wraps

Lettuce leaves Shredded (approx. 1 cup)
Naturally Saveur Website
Tomatoes chopped (2-3)
Grated Tasty Cheese (approx. 1 cup)
(Place salad & cheese items into small bowls and everyone can choose and make their own)


Method:
Add onion to pan, lightly sautee, add mince, continually stirring, until browned and cooked
Add salt, SAVEUR Taco Spice, and tomatoes
Reduce Heat, simmer 10 minutes - add beans and heat through.

Divide Mince Mixture between all of the Taco Shells and/or Tortilla Wraps
Top with Chopped tomatoes, shredded lettuce and Grated cheese.


The family had a lot of fun putting their tacos together, and even though quite messy at times, they totally enjoyed eating them - we did have a few laughs around the dinner table.

Japanese inspired Crispy Chicken Tenders Recipe

Japanese inspired Crispy Chicken Tenders  
  
Ingredients:
500 g chicken tenderloins
1/4 cup flour
2 tablespoons Saveur Japanese Curry Mix
1 egg lightly beaten
1 + 1/4 cup Panko bread crumbs
2 teaspoons Saveur Himalayan salt & Pepper (ground)

Method:
1/  On one plate Add the Saveur Japanese curry to the flour mix well.
2/  On another plate Add the Saveur Himalayan salt to the Panko breadcrumbs, mix well.
3/  Lightly beat an egg in a bowl
4/  Coat chicken well in flour, tap off excess then place in egg and shake off excess
5/  Coat chicken well in panko breadcrumb mix
6/  Refrigerate 20 minutes
7/  Shallow fry in peanut or vegetable oil until golden brown and crispy.
